IFSAC Analysis Improves Understanding of Foodborne Illness Attribution #foodsafety

IFSAC Analysis Improves Understanding of Foodborne Illness Attribution

June 15, 2016
Scientists from the Interagency Food Safety Analytics Collaboration (IFSAC) recently published “Comparing Characteristics of Sporadic and Outbreak-Associated Foodborne Illnesses, United States, 2004–2011,” a paper in Emerging Infectious Diseases that compared some characteristics of outbreak and sporadic (non-outbreak) human illnesses caused bySalmonellaEscherichia coli (E. coli) O157, Listeria monocytogenes, and Campylobacter.  The analyses help assess the usefulness of outbreak data in estimating which major food categories are linked to foodborne illnesses.
Using data collected by CDC’s Foodborne Diseases Active Surveillance Network (FoodNet), the study compared outbreak illnesses with sporadic illnesses. The results of the analysis provide evidence that:
  • CampylobacterListeria monocytogenes, and E. coli O157 outbreak illnesses are not significantly different from sporadic illnesses with respect to patients’ illness severity, gender, and age.
  • Salmonella outbreak illnesses are not significantly different from sporadic illnesses with respect to illness severity and gender.  For age, the percentages of outbreak and sporadic illnesses that occur among older children and adults are also similar.  However, the percentage of outbreak illnesses in the youngest age category (0-3 years) was substantially lower compared with the other age groups.
FoodNet data include only a portion of reported U.S. illnesses (about 15% of the U.S. population); therefore, the number of outbreaks and illnesses available for analysis was limited.  For example, fewer Campylobacter illnesses were associated with outbreaks compared with the other three pathogens, which limits the strength of conclusions about Campylobacterattribution.
This study’s finding that outbreak and sporadic illnesses have similar characteristics indicates that using outbreak data to estimate which foods are most often linked to specific foodborne illnesses is reasonable for most age groups among the pathogens examined in this analysis.  Analyses, such as this study, help us better understand the relationship between sporadic foodborne illnesses and those that are identified as a part of an outbreak.  Such analyses are essential to advancing scientific progress in this field.  IFSAC also developed a research brief on the article.

IFSAC was created in 2011 by three federal agencies—the Centers for Disease Control and Prevention (CDC), the U.S. Food and Drug Administration (FDA), and the Food Safety and Inspection Service (FSIS) of the United States Department of Agriculture (USDA)—to improve coordination of federal food safety analytic efforts and address cross-cutting priorities for food safety data collection, analysis, and use.  IFSAC activities currently focus on foodborne illness source attribution, defined as the process of estimating the most common food sources linked to specific foodborne illnesses.  More information about IFSAC and our work is available here.

New #foodsafety #recall possible #Ecoli O157:H7 #contamination of 3,586 lbs of G & M Co. beef products

G & M Co. Recalls Beef Products Due To Possible E. Coli O157:H7 Contamination

Class I Recall049-2016
Health Risk: HighJun 14, 2016
Congressional and Public Affairs
Benjamin Bell
(202) 720-9113
WASHINGTON, June 14, 2016 – G & M Co., a Newark, N.J. establishment, is recalling approximately 3,586 pounds of beef products that may be contaminated with E. coli O157:H7, the U.S. Department of Agriculture’s Food Safety and Inspection Service (FSIS) announced today.
The bulk beef cuts and trimmings items were produced on June 8, 9, and 10, 2016. The following products are subject to recall:
  • 3,586-lbs. – Various box sizes ranging from 30-195 lb. containing plastic wrapped bulk beef cuts and trimmings marked only with plant identifier “M5476.”
The products subject to recall bear establishment number “M5476” inside the USDA mark of inspection. These items were shipped to retail locations in New Jersey and New York.
The issue was identified on June 14, 2016, when FSIS Inspection Program Personnel (IPP) conducted trace-back and trace-forward activities after the firm received a confirmed positive for Escherichia coli O157:H7 from FSIS sampling and testing. There have been no confirmed reports of adverse reactions due to consumption of these products.
E. coli O157:H7 is a potentially deadly bacterium that can cause dehydration, bloody diarrhea and abdominal cramps 2–8 days (3–4 days, on average) after exposure the organism. While most people recover within a week, some develop a type of kidney failure called hemolytic uremic syndrome (HUS). This condition can occur among persons of any age but is most common in children under 5-years old and older adults. It is marked by easy bruising, pallor, and decreased urine output. Persons who experience these symptoms should seek emergency medical care immediately.
FSIS and the company are concerned that some product may be frozen and in consumers’ freezers.
Consumers who have purchased these products are urged not to consume them. These products should be thrown away or returned to the place of purchase.
FSIS routinely conducts recall effectiveness checks to verify recalling firms notify their customers of the recall and that steps are taken to make certain that the product is no longer available to consumers. When available, the retail distribution list(s) will be posted on the FSIS website at www.fsis.usda.gov/recalls.
FSIS advises all consumers to safely prepare their raw meat products, including fresh and frozen, and only consume whole beef products that have been cooked to a temperature of 145° F. The only way to confirm that whole beef cuts are cooked to a temperature high enough to kill harmful bacteria is to use a food thermometer that measures internal temperature, http://1.usa.gov/1cDxcDQ.
Media and consumers with questions regarding the recall can contact Jose Morales, Plant Manager, at (973) 621-7444.

FDA to Hold Public Workshops to Discuss Menu Labeling
June 14, 2016
The U.S. Food and Drug Administration (FDA) is announcing a series of public workshops about menu labeling to help industry comply with requirements to provide calorie and other nutrition information to consumers. The workshops will address the menu labeling final rule – Nutrition Labeling of Standard Menu Items in Restaurants and Similar Retail Food Establishments. Federal law and FDA regulations require certain chain restaurants and similar retail food establishments to give consumers nutrition information on standard menu items. The compliance date for these requirements is May 5, 2017.
The purpose of these workshops is to further the dialogue with industry about implementation of the menu labeling final rule and provide additional clarity on the requirements. Interested parties will have the opportunity to discuss specific menu labeling questions and concerns directly with FDA subject matter experts through pre-scheduled one-on-one sessions.
